Dore Wat (Ethiopian dish)

Serves: 1, Calories: 301, Fat: 3.7g

Ingredients:
Onions, chopped
6 Garlic cloves
2 tsp Red or cayenne pepper, ground
1 tsp Cumin, ground
1 tsp Cardamom, ground
1 tsp Nutmeg, ground
1 tsp Fennel seeds, ground
1 tsp Black pepper, ground
25 cups Tomato Paste (no salt added)
400 ml Vegetable stock
1 tbs Soy Sauce
? cup Coriander
? cup Berbere *
? cup Carrots, boiled and sliced
? cup Yellow sweet corn, boiled
? cup Potatoes, whole
1 ? cup Long-grain brown rice, cooked



Method:

    In a large heavy saucepan, cook the onions, garlic and spices, adding a little stock to stop it from sticking and burning. Cook for 7 minutes to release the flavors from the spices. Add the Berbere paste, tomato paste, vegetable stock and chicken. Stir and cook for 15 minutes. Once the chicken is cooked, add the vegetables, continue cooking for another 5 minutes on medium heat. Serve sprinkled with coriander, and with the brown rice and cucumber on the side (to put out the fire).
