Banana cake (wheat free)
Serves: 16, Calories: 80, Fat: 0.9g
Ingredients: 1/3 cup brown sugar 5 ripe bananas 1/2 tsp. baking soda 1/2 tsp. baking powder 2 whole eggs
Method:
Peel and cut bananas then mash with a whisk until there are no lumps, add the baking soda, then, whisk the eggs with the sugar to a stiff peak. Lightly grease and flour a 11” cake ring (using corn flour) now add all the ingredients to the egg mix and gently fold thoroughly. Bake at 165? C for approximately 30 minutes, test with a skewer. Remove to a wire rack to cool.
