Sweet & Sour Fish ‘Thai style’
Serves: 2, Calories: 240, Fat:1.4g
Ingredients: 200g King fish, diced 1 cup sweet corn 1 cup pineapple* diced 1 cucumber - seeded & diced 1 onion 2 tomatoes - seeded 3 spring onions 1 small chili 2 Tbs. soy sauce 2 tsp. corn starch
Method:
Place vegetable stock &
diced onion, in a saucepan, and bring to the boil. Add the fish,
sweetcorn, cucumber, pineapple & tomatoes. Cover and simmer
until soft, but not over cooked. Add chopped green onions, chili,
soy and season to taste. Add a little more vegetable stock if too
dry. Simmer for a further 1 - 2 minutes. Thicken with cornstarch,
reboil and serve. Note:
If the pineapple is a good ripe one, no sweetener
will be required. If it is a not full flavored, you may need to add
up to 1 tsp. of sugar @ 20 calories/tsp. |
