Steamed prawns dumpling

Ingredients: 2 Chinese mushrooms, soaked 2 Water chestnuts 2 Spring onions 2 tbs bamboo shoots, chopped 2 tsp light soy sauce 1/4 tsp sesame oil 1/4 tsp Chinese wine 1/4 tsp ground black pepper 1 egg white 16 pcs wonton wrappers 1/2 kg prawns
Method:
Shell and de-vein the prawns. Finely chop the prawns, mushrooms, water chestnuts, spring onions and bamboo shoots. Mix all together. Season with soy, Chinese wine, sesame oil and pepper, adding to taste. Place a teaspoon of the mix onto the center of a wonton wrapper. Moisten the edges with egg white and fold into a dumpling, crimping the edges. Place on a steaming rack, and repeat the process until all the wrappers have been used. Steam dumplings for 7-10 minutes or until firm to touch, and wrappers are translucent. Serve.
