Terrine of oven roasted vegetables, nuts and herbs
Serves: 6, Calories: 120, Fat:4.3g
Ingredients: 400g low fat cheese 100ml low fat cream 5g gelatin powder 40g fresh herbs 30g cashew nuts 30g pistachio nuts 60ml balsamic 50ml olive oil 60g seasonal greens 80g Chinese salad lemon juice salt substitute & pepper, to taste
Method:
Mix together
low fat cheese, low fat cream, gelatin, herbs and chopped nuts and
season to taste with salt substitute, pepper and lemon juice.
Assemble terrine with the vegetables. Boil rapidly to reduce
balsamic and mix with olive oil. Season. Prepare vinaigrette with
olive oil and lemon juice.
Presentation: Arrange salad on plate,
together with Chinese salad tossed in a little vinaigrette. Cut
terrine and arrange on plate then spoon on balsamic
sauce.
