Thai coconut brownie (Ba Bin)
Serves: 60, Calories: 75, Fat:1.9g
Ingredients: 125 g tapioca flour 1000 g fresh coconut flesh, shredded 2 egg whites 2 cups sugar 1 cup water 1 egg, lightly beaten (to brush on top before putting on the oven)
Method:
- Combine rice flour, tapioca flour and shredded coconut and mix well with a spatula.
- Combine egg whites, sugar and water and add to the flour mixture. Mix well.
- Pour into a baking pan and brush the top with the egg lightly beaten.
- Bake at 170C for
about 25 minutes or until golden color. Cool. Cut and serve.
