ROASTED MARINATED SALMON WITH GREEN PAPAYA SALAD

Serves: 1, Calories: 241, Fat:5.7g

Ingredients:
Salmon Fillet=1 inch 120g
Soy Sauce 1 Tbsp
Honey 1 Tbsp
Coriander Seed Grounded Roasted 1/2 Tsp

Som Tam Salad
Red Chili Chopped 1 Tsp
Small Garlic Peeled 1 Tbsp
Soy Sauce 1 Tbsp
Honey 1/2 Tbsp
Lime Juice 1 Tbsp
Ground Almonds 1/2 Tbsp
Breen Papaya Grated 1/2 cup
Carrot Grated 1/2 cup
Cherry Tomato Halved 3 pcs
String Bean cut inch long 1 pcs


Ingredients for Archard
200 g Iceberg Lettuce, Chopped
100 g Carrot, Julienned
100 g Bean Sprout, Cooked
10 g Red Bell Pepper, Julienned
10 g Yellow Bell pepper, Julienned
10 g Green Bell Pepper, Julienned
5 g Chili Powder
1/4 cup Honey
1/4 cup Apple Cider Vinegar


Method:

    Salmon
    Marinate all ingredients in a bowl for 1 hour. Then roast at 250 C for 10 minutes.

    Som Tam Salad
    Whisk chili, garlic, soy sauce, honey, lime juice and almond together and keep refrigerated. Toss dressing with all ingredients in a salad bowl. Serve with salmon.

Note:
A particulary beneficial dish for anyone with any kind of inflammatory problem. Essential fatty acids from fish, in particular cold water salmon promotes an anti-inflammatory state in the body. Som Tam, made with green papaya is high in papain.
