In a non-reactive bowl, mix
orange juice, cayenne pepper and apple juice concentrate. Place
snow fish in the mixture and turn to coat well. Marinate the snow
fish in the mixture for 30 minutes. Pan-fry the snow fish on each
side for a total time of about 12 to 15 minutes or until opaque in
the center.
Salsa:
In a medium bowl, combine oranges, pineapple,
mango, jalapeno, orange juice, red bell pepper, honey and
coriander. Mix well and refrigerate covered
Sautee Spinach:
In a pan, add vegetable stock, garlic and
onion. Sautee garlic and onion with medium heat until cooked. Add
spinach and continue stirring until cooked.
